On November 11, the Observatory Hill dining hall began composting its diner-discarded food, kitchen scraps and unusable leftovers instead of sending it to landfills. Though trayless dining has reduced the amount of uneaten food, O-Hill will still be able to ship out two and a half tons of pulped food in 250 pound, 30 gallon plastic drums every week. The composting program is the successful result of a class project carried through by third-year student Daniel Michaelson, in conjunction with Green Dining, a student advisory group for Dining Services; U.Va. Dining; Facilities Management’s recycling office; and U.Va.’s Office of Environmental Health and Safety.
